Size, stability and workflow

A board should hold the ingredient and the cut pieces without forcing food onto the counter. Measure your sink, dishwasher and storage slot before choosing a large size. A board that cannot be cleaned or dried conveniently will become a burden.

Stability is essential. Use built-in nonslip feet when they are secure and cleanable, or place a damp towel beneath a flat board. Avoid balancing a board over an unstable sink opening unless it is specifically designed for that use.

Cleaning and retirement

Wash boards after use with hot, soapy water and follow the manufacturer's instructions. USDA says wooden and plastic boards can be sanitized with a solution of one tablespoon of unscented liquid chlorine bleach per gallon of water, followed by rinsing and air drying. Never mix bleach with other cleaning chemicals.

Retire a board that has persistent cracks, separation, severe warping or grooves that remain dirty after proper cleaning. Replacement is part of the ownership cost, especially for light plastic boards used heavily.
